The practical differences between hardwood and plastic cutting boards appear during chopping, washing, storage and replacement. Hardwood feels solid and is generally gentler on knives, but it must be dried and maintained properly. Plastic is lighter and easier to wash, yet its surface can become deeply scored over time. Hardwood has a slight natural give. The knife meets a firm surface without the sharp impact associated with stone or glass. This is one reason wooden boards remain popular for everyday chopping and food presentation.
Plastic feels lighter and can move more easily unless it has nonslip feet or a damp towel underneath. Thin plastic sheets are convenient for transferring ingredients, although they may not provide the same stable work surface as a thicker hardwood board.
Neither material is immune to knife marks. The difference lies in how the marks develop and how the board ages.
Plastic’s nonporous surface makes routine washing straightforward, and many plastic boards are dishwasher-compatible. High heat may still affect some lightweight products, so users should follow the relevant care instructions.
Hardwood should be washed without lengthy soaking and then dried with air reaching both faces. A board left wet on one side may absorb moisture unevenly and begin to move out of shape.
A dry-looking wooden board can be refreshed with a suitable food-safe oil or wax. Cooking oils that become sticky or rancid should not be used as a substitute for the recommended maintenance product.
A plastic board is normally treated as a preparation tool. Hardwood often has a second role. Natural grain and a shaped edge allow the board to carry bread, steak, pizza, cheese or appetizers directly to the table.

Wooden boards can still be separated by size, engraved markings, handle shape or assigned use, but color coding is not their natural strength.
